How does RFID technology work when used for food expiry labels that change colour?
and how can the information be translated and sent to a label which lights/changes colour when a product is expiring.

Chemochromic labels that change color after preset determined length of time are different from RFID tags that have information on them that can be read by a computer using and RF Loop.
With this said it would be possible to put expiration data on a RFID label so that when brought to the check out location the unit could be flagged as expired or approaching expiration.
The Chemochromic labels work on a variety of technologies, some of them are almost exclusively time sensitive and others are time and temperature sensitive so that if the temperature changes the time to expiration can be modified.
If you wanted to combine the two types of technology especially when the time to expiration might be variable then it should be possible to build into the RFID circuit a time sensitive fuse that would change the characteristics of the circuit so that it reports different information once the expiration date is reached.
I do not know of any one is doing this today, but it should be possible.
