I'd like to create the text within Part design workbench to projected on the 3D model. Can anyone help me? Thank you.

Open a drawing file, write out whatever you want on a surface, highlight the words and copy them. Once copied in a dxf file you can paste it right into a sketch. CATIA V5 will create the profiles from what you have copied. From here you can pad, pocket, or lay tool paths on the text. Have fun!
